The culinary landscape of Poland takes centre stage in the recently released MICHELIN Guide Poland 2023. A significant milestone is reached with the introduction of ‘Bottiglieria’ 1881 in Cracow, the country’s first-ever Two MICHELIN Star restaurant. The guide also delves into the dynamic restaurant scene of Poznań, uncovering 11 exceptional establishments worthy of recognition.

The latest edition of the MICHELIN Guide Poland, released in 2023, introduces a noteworthy selection of 22 new establishments, resulting in a total of 49 recommended restaurants. Among these, Cracow boasts 18 restaurants, Poznań offers 11, Kościelisko features 1, and the capital city of Warsaw presents 19 culinary gems. Notably, this impressive count includes a restaurant that has recently been elevated to Two MICHELIN Stars, along with the distinction of One MICHELIN Star bestowed upon 2 other establishments. Additionally, the guide introduces 6 fresh Bib Gourmand restaurants that provide exceptional value and quality dining experiences.
In addition to their visits to Cracow and Warsaw, the MICHELIN Inspectors expressed great excitement as they embarked on their first exploration of Poznań’s restaurant scene. During their journey, they uncovered 11 exceptional restaurants in the city that deserve recognition.

’Bottiglieria’ 1881, located in Cracow, has become Poland’s inaugural Two MICHELIN Star restaurant, advancing from its previous status of One MICHELIN Star. For individuals who enjoy observing chefs at work, there are tables positioned in front of the open kitchen. The passion and expertise exhibited by the kitchen staff are evident in the sophisticated and innovative dishes they create. Despite the modest descriptions on the menu, such as 'Fish and Peas’ and 'Countryside Pork,’ each dish showcases an intricate blend of flavours and artistic composition.
Poznań’s inclusion in the Guide welcomes ’Muga’, a restaurant that immediately secures One MICHELIN Star status. Situated on the ground floor of an elegant apartment building, this formal establishment has been operating since 2014 with a high level of professionalism. The cuisine presented at 'Muga’ exhibits depth, elegance, finesse, and impeccable balance. Noteworthy dishes include perfectly seared scallops accompanied by sea lettuce and quinoa, as well as roasted duck served with beetroot and elderberry, showcasing the chef’s culinary expertise.
Meanwhile, in Warsaw, esteemed chef and restaurateur Andrea Camastra faced the unfortunate closure of his previous restaurant, „Senses”, due to the pandemic. However, he has made a triumphant return with the launch of ’NUTA’. Camastra’s Italian heritage, coupled with his passion for Asian cuisine, blends harmoniously with flavours and textures sourced from various regions of Poland. The result is a collection of innovative dishes, such as Baltic sea trout complemented by Oscyoek and Leczo infused with lobster, calamari, and octopus. Camastra’s creativity shines through in his culinary creations at 'NUTA’.

There are six newly awarded MICHELIN Bib Gourmand restaurants that will surely please enthusiasts of this prestigious distinction, which recognises establishments offering excellent food at affordable prices. In Cracow, 'MOLÁM’ stands out as a vibrant Thai restaurant, while in Poznań, 'Fromażeria’ caters to cheese lovers. Additionally, ’TU.REStAURANT’ in Poznań captivates diners with its modern European menu and striking ambience. In Warsaw, ’Koneser Grill’ operates within a former vodka factory and specialises in top-quality steaks. 'Le Braci’ provides an intimate Italian dining experience with an alluring menu, and ’Kieliszki na Próżnej’ impresses with hearty cuisine and an extensive wine list. These six new additions join the existing Bib Gourmand recipient, ’alewino’, which offers traditional Polish flavours and an excellent selection of wines.
The culinary world holds Michelin stars as one of the most prestigious recognitions. Michelin inspectors have the privilege to award restaurants with one, two, or three stars based on their exceptional quality and culinary excellence.
